After spending 10 years working in the kitchens of London, the Lake District & The New Forrest – I made the jump over to working within private households. People always ask me what my signature dish is or what type of cuisine I specialise in. I never really know how to answer that.
I guess I specialise in my food. I’ve always liked the quote, ‘mother nature is the true artist,’ and I guess I let that guide me. I truly believe that the quality that makes a chef great beyond all others is simply the intrinsic desire to make others happy with food. And after 20 years on the stove that’s what it’s about for me.
